Snowy Day Low Carb Chicken (Printable)

01 - 1.3 lbs boneless, skinless chicken breasts, cut into bite-size pieces

→ Vegetables

02 - 7 oz fresh spinach, roughly chopped
03 - 1 small onion, finely chopped
04 - 2 cloves garlic, minced

05 - ½ cup heavy cream
06 - 1 cup shredded mozzarella cheese
07 - ½ cup grated Parmesan cheese
08 - ¼ cup cream cheese, softened

→ Pantry

09 - 1 tbsp olive oil
10 - 1 tsp dried thyme
11 - ½ tsp smoked paprika
12 - ½ tsp salt
13 - ¼ tsp ground black pepper

# Steps:

01 - Preheat the oven to 375°F.
02 - In a large skillet, heat olive oil over medium-high heat. Add chicken pieces, season with salt, pepper, thyme, and smoked paprika. Sauté for 4–5 minutes until lightly browned.
03 - Add chopped onion and garlic, cook for 2–3 minutes until softened.
04 - Add spinach and sauté until wilted, about 2 minutes.
05 - Lower heat to medium. Stir in cream cheese and heavy cream until the mixture is smooth and creamy.
06 - Remove from heat. Fold in half of the mozzarella and all the Parmesan cheese.
07 - Transfer the mixture to a greased baking dish. Sprinkle remaining mozzarella on top.
08 - Bake for 20–25 minutes, until golden and bubbling.
09 - Let rest for 5 minutes before serving.
