01 - Preheat your oven to 425°F. Line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
02 - Place cauliflower florets in a large bowl. Drizzle with olive oil and sprinkle with kosher salt and pepper. Toss thoroughly to coat each piece evenly.
03 - Spread the seasoned florets in a single layer on the prepared baking sheet. Roast for 25 to 30 minutes, flipping halfway through cooking, until edges are golden brown and cauliflower is tender when pierced with a fork.
04 - While cauliflower roasts, combine mayonnaise, sour cream, parsley, basil, chives, tarragon, lemon juice, garlic, anchovies, salt, and pepper in a blender or food processor. Blend until completely smooth and creamy. Taste and adjust seasoning as desired.
05 - Transfer roasted cauliflower to a serving platter. Drizzle generously with the Green Goddess Herb Sauce, or serve sauce alongside for dipping.
