# List of ingredients:

→ Miso Maple Salmon

01 - 4 salmon fillets (5–6 oz each), skin-on or skinless
02 - 2 tablespoons white miso paste
03 - 2 tablespoons pure maple syrup
04 - 1 tablespoon low-sodium soy sauce
05 - 1 tablespoon rice vinegar
06 - 1 teaspoon toasted sesame oil
07 - 1 teaspoon fresh ginger, grated
08 - 1 garlic clove, minced
09 - 1 tablespoon vegetable oil, for searing

→ Sesame Snap Pea Slaw

10 - 2 cups snap peas, thinly sliced on the bias
11 - 1 cup carrot, julienned
12 - 1/2 small red onion, thinly sliced
13 - 1/2 cup red bell pepper, julienned
14 - 2 tablespoons fresh cilantro, chopped
15 - 1 tablespoon toasted sesame seeds

→ Slaw Dressing

16 - 2 tablespoons rice vinegar
17 - 1 tablespoon toasted sesame oil
18 - 1 tablespoon soy sauce
19 - 1 teaspoon honey or maple syrup
20 - 1 teaspoon fresh lime juice
21 - Salt and pepper, to taste

# Steps:

01 - Preheat the oven to 400°F. Line a baking sheet with parchment paper and set aside.
02 - In a small bowl, whisk together the white miso paste, maple syrup, soy sauce, rice vinegar, sesame oil, grated ginger, and minced garlic until smooth and well combined.
03 - Pat the salmon fillets dry with paper towels. Brush both sides generously with the miso maple glaze, reserving any remaining glaze for serving.
04 - Heat the vegetable oil in a large ovenproof skillet over medium-high heat. Place the salmon fillets skin side down and sear for 2 minutes until lightly browned.
05 - Transfer the skillet to the preheated oven (or move the salmon to the prepared baking sheet). Roast for 8 to 10 minutes until the salmon is just cooked through and flakes easily with a fork.
06 - While the salmon cooks, combine the snap peas, julienned carrot, red onion, bell pepper, and cilantro in a large mixing bowl.
07 - In a small bowl, whisk together the rice vinegar, sesame oil, soy sauce, honey or maple syrup, lime juice, salt, and pepper until emulsified.
08 - Pour the dressing over the slaw vegetables and toss thoroughly to coat. Sprinkle with toasted sesame seeds.
09 - Serve the roasted salmon fillets over a bed of the sesame snap pea slaw. Drizzle with any reserved miso maple glaze.

# Expert Advice:

01 -
  • The glaze walks a perfect line between sweet and savory, and it comes together with pantry staples you probably already have.
  • The slaw stays crunchy for days, so you can make extra and enjoy it long after the salmon is gone.
02 -
  • Do not skip patting the salmon dry because moisture on the surface prevents a good sear and the glaze will slide right off.
  • Watch the oven closely after eight minutes because salmon goes from perfectly flaky to overcooked in under a minute.
03 -
  • Toasting sesame seeds in a dry pan for one minute doubles their flavor and takes almost no effort.
  • Let the glaze sit for five minutes after whisking so the miso fully dissolves and the flavors marry.
