01 - 2 lbs beef chuck, cut into 1-inch cubes
02 - 4 slices bacon, chopped

07 - 1 medium turnip, peeled and cubed

# Steps:

01 - Heat olive oil in a large Dutch oven over medium-high heat. Add chopped bacon and cook until crisp. Remove bacon with a slotted spoon and set aside.
02 - Add beef cubes in batches to the pot, searing on all sides until browned. Remove and set aside.
03 - Lower heat to medium. Add diced onion, minced garlic, and sliced celery to the pot. Sauté for 3 to 4 minutes until softened.
04 - Stir in turnip, zucchini, and mushrooms. Cook for an additional 3 minutes.
05 - Return seared beef and rendered bacon to the pot. Stir in tomato paste until evenly distributed.
06 - Pour in beef broth. Add thyme, rosemary, bay leaf, smoked paprika, black pepper, and salt. Bring to a simmer.
07 - Reduce heat to low, cover, and cook for 45 to 50 minutes until beef is tender and flavors meld.
08 - Stir in chopped kale and cook uncovered for 5 minutes until wilted.
09 - Remove bay leaf. Taste and adjust seasoning if necessary.
10 - Ladle stew into bowls. Garnish with fresh parsley and lemon zest if desired. Serve hot.
