Whipped Feta Stuffed Mini Peppers (Printable)

01 - 16 mini sweet peppers

→ Cheese Filling

02 - 7 oz feta cheese, crumbled
03 - 3 oz cream cheese, softened
04 - 2 tbsp extra virgin olive oil
05 - 1 tbsp lemon juice
06 - 1 garlic clove, minced
07 - 1 tbsp fresh dill, chopped
08 - Freshly ground black pepper, to taste

09 - 1 tbsp toasted pine nuts
10 - 1 tsp smoked paprika

# Steps:

01 - Slice each mini pepper in half lengthwise and remove seeds and membranes. Set aside.
02 - In a food processor, combine feta cheese, cream cheese, olive oil, lemon juice, garlic, dill, and black pepper. Blend until smooth and creamy, scraping down the sides as needed.
03 - Spoon or pipe the whipped feta mixture into each pepper half, filling generously.
04 - Arrange stuffed peppers on a serving platter. Garnish with extra dill, toasted pine nuts, and a sprinkle of smoked paprika if desired. Serve immediately or refrigerate until ready to serve.
