# Steps:

01 - Preheat oven to 425°F for roasting the zucchini.
02 - Toss diced zucchini with 1 tbsp olive oil, oregano, salt, and pepper. Spread evenly on a baking sheet and roast for 18-20 minutes until golden brown and tender. Allow to cool slightly before assembling.
