Whipped Feta Roasted Asparagus Tart (Printable)

01 - 1 sheet frozen puff pastry (about 9 oz), thawed

02 - 7 oz feta cheese, crumbled
03 - 3.5 oz cream cheese, softened
04 - 2 tbsp Greek yogurt
05 - 1 tbsp lemon juice
06 - 1 tsp lemon zest
07 - 1 tbsp olive oil
08 - Freshly ground black pepper, to taste

09 - 10.5 oz asparagus, trimmed
10 - 1 tbsp olive oil
11 - 1/2 tsp sea salt
12 - 1/4 tsp black pepper

13 - 2 tbsp fresh dill or chives, chopped
14 - 1 tsp lemon zest
15 - Chili flakes, to taste

# Steps:

01 - Preheat the oven to 400°F. Line a baking tray with parchment paper.
02 - Unroll the puff pastry onto the prepared tray. Score a 3/4 inch border around the edge without cutting all the way through. Prick the center with a fork.
03 - Bake the pastry for 10 minutes until slightly puffed but not fully golden. Remove from the oven and set aside.
04 - Toss asparagus with 1 tbsp olive oil, salt, and pepper. Spread on a separate baking sheet. Roast in the oven for 10-12 minutes until just tender.
05 - In a food processor, blend feta, cream cheese, Greek yogurt, lemon juice, lemon zest, olive oil, and black pepper until very smooth and creamy.
06 - Gently press down the center of the pre-baked pastry. Spread the whipped feta mixture evenly inside the border.
07 - Arrange the roasted asparagus spears on top of the whipped feta.
08 - Return the tart to the oven and bake for another 10-12 minutes, until the edges are golden brown.
09 - Remove from the oven, sprinkle with fresh herbs, extra lemon zest, and chili flakes if desired. Serve warm or at room temperature.
