Warm Hearth Low Fat Tacos (Printable)

01 - 1 lb lean ground turkey (or extra-lean ground chicken)

02 - 1 medium red onion, finely chopped

05 - 1 medium zucchini, diced
06 - 2 medium tomatoes, diced
07 - 1 cup shredded lettuce

15 - 8 small corn tortillas (6-inch, preferably whole grain)
16 - 1/2 cup fat-free Greek yogurt (as a sour cream alternative)
17 - 1 lime, cut into wedges

# Steps:

01 - Heat a large nonstick skillet over medium heat. Add the ground turkey and cook, breaking it up with a spatula, until no longer pink (about 5 minutes).
02 - Add the chopped onion and garlic to the pan. Sauté for 2 minutes until softened.
03 - Stir in the bell pepper and zucchini. Cook for 3–4 minutes until vegetables are just tender.
04 - Add the diced tomatoes, chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Stir well and simmer for 4–5 minutes, until most of the liquid has evaporated and flavors are blended.
05 - Warm the corn tortillas in a dry skillet or microwave until pliable.
06 - Assemble each taco with a generous spoonful of turkey-vegetable mixture, shredded lettuce, a dollop of Greek yogurt, chopped cilantro, and a squeeze of lime. Serve immediately.
