03 - Wipe out the skillet and add spiralized zucchini. Sauté for 1-2 minutes until just tender but still crisp. Avoid overcooking to maintain texture.

# Expert Advice:

01 -
  • That peanut sauce is honestly good enough to eat with a spoon, and its made with pantry staples
  • You get all the satisfaction of a noodle bowl without the heavy, post-meal slump that regular pasta brings
  • The prep is minimal once you get the hang of spiralizing, and the colors alone will make you smile
02 -
  • Zucchini releases water as it sits, so cook it right before serving or your bowl will turn into soup at the bottom
  • The peanut sauce thickens in the fridge, so add another splash of warm water when reheating leftovers
  • Overcooking the zucchini is the number one mistake, aim for al dente like you would with real pasta
03 -
  • Room temperature peanut butter whisks into sauce much more easily than cold straight from the fridge
  • Toasted sesame oil adds incredible depth, but plain works if that is what you have on hand
