Snowy Day Vegan Chili (Printable)

01 - 1 can (15 oz) kidney beans, drained and rinsed
02 - 1 can (15 oz) black beans, drained and rinsed
03 - 1 can (15 oz) chickpeas, drained and rinsed

04 - 2 tablespoons olive oil
05 - 1 large onion, diced
06 - 3 cloves garlic, minced
07 - 1 red bell pepper, diced
08 - 1 green bell pepper, diced
09 - 2 medium carrots, diced
10 - 2 celery stalks, diced
11 - 1 jalapeño, seeded and diced (optional)
12 - 1 can (28 oz) diced tomatoes, with juices
13 - 1 cup vegetable broth
14 - 1 cup corn kernels (fresh, frozen, or canned)

16 - 1 tablespoon ground cumin
17 - 1 teaspoon smoked paprika
18 - 1/2 teaspoon ground coriander
19 - 1/4 teaspoon cayenne pepper (optional)

21 - 1/2 teaspoon black pepper
22 - 2 teaspoons dried oregano

# Steps:

01 - Heat olive oil in a large pot over medium heat. Add onion, garlic, bell peppers, carrots, celery, and jalapeño. Sauté for 7–8 minutes until vegetables are softened.
02 - Stir in chili powder, cumin, smoked paprika, coriander, cayenne, salt, black pepper, and oregano. Cook for 1–2 minutes until fragrant.
03 - Add diced tomatoes, kidney beans, black beans, chickpeas, corn, and vegetable broth. Stir well to combine all ingredients.
04 - Bring to a boil, then reduce heat to low. Cover and simmer for 30–35 minutes, stirring occasionally to develop flavors.
05 - Taste and adjust seasoning as needed. If desired, simmer uncovered for another 10 minutes to thicken the chili.
06 - Serve hot, garnished with fresh cilantro, sliced avocado, and lime wedges.
