01 - In a large bowl, combine Greek yogurt, mayonnaise, chipotle peppers, smoked paprika, cumin, garlic powder, salt, and black pepper. Whisk until completely smooth and well incorporated.
02 - Add shredded chicken, red onion, cherry tomatoes, cilantro, and lime juice to the bowl. Fold until all ingredients are evenly coated with the chipotle dressing.
03 - Cut avocados in half lengthwise and remove pits. Carefully scoop out a small amount of flesh from each half to create a larger cavity for filling. Reserve scooped avocado for another use.
04 - Arrange avocado halves on a serving platter. Generously spoon the smoky chipotle chicken mixture into each cavity, mounding slightly on top.
05 - Sprinkle with crumbled cotija or feta cheese if desired, garnish with additional cilantro leaves, and serve with lime wedges on the side. Serve immediately for best texture.
