Sheet-Pan Salmon Roasted Vegetables (Printable)

01 - 4 skinless salmon fillets, approximately 5 oz each
02 - 1 tablespoon olive oil
03 - 1/2 teaspoon salt
04 - 1/4 teaspoon freshly ground black pepper
05 - 1 teaspoon lemon zest

06 - 1 medium red bell pepper, sliced
07 - 1 medium yellow bell pepper, sliced
08 - 1 small red onion, cut into wedges
09 - 7 oz cherry tomatoes, halved
10 - 7 oz zucchini, sliced into half-moons
11 - 1 medium carrot, sliced thin
12 - 2 tablespoons olive oil
13 - 1/2 teaspoon salt
14 - 1/2 teaspoon dried oregano
15 - 1/4 teaspoon black pepper

16 - 2 tablespoons fresh parsley, chopped

# Steps:

01 - Preheat oven to 425°F. Line a large sheet pan with parchment paper.
02 - Combine bell peppers, red onion, cherry tomatoes, zucchini, and carrot in a mixing bowl. Toss with 2 tablespoons olive oil, 1/2 teaspoon salt, dried oregano, and 1/4 teaspoon black pepper. Arrange evenly over the sheet pan.
03 - Roast vegetables in the preheated oven for 10 minutes.
04 - Pat salmon fillets dry. Rub with 1 tablespoon olive oil, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and lemon zest.
05 - After 10 minutes, remove the sheet pan from the oven. Push roasted vegetables to the sides and make space to arrange salmon fillets in the center.
06 - Return sheet pan to the oven and roast for 10 to 12 minutes, until the salmon is just cooked through and vegetables are tender.
07 - Garnish with chopped fresh parsley and serve with lemon wedges.
