Miso Maple Tofu With Sesame Snap Peas (Printable)

# List of ingredients:

→ Tofu

01 - 14 oz firm tofu, pressed and cut into 2 cm cubes
02 - 2 tbsp cornstarch
03 - 2 tbsp neutral oil (e.g., canola, grapeseed)

→ Miso Maple Sauce

04 - 2 tbsp white miso paste
05 - 2 tbsp pure maple syrup
06 - 1 tbsp soy sauce (or tamari for gluten-free)
07 - 1 tbsp rice vinegar
08 - 1 tbsp water
09 - 1 tsp toasted sesame oil
10 - 1 tsp freshly grated ginger

→ Stir Fry

11 - 1 tbsp neutral oil
12 - 9 oz snap peas, trimmed
13 - 1 red bell pepper, thinly sliced
14 - 2 spring onions, sliced
15 - 2 cloves garlic, minced
16 - 1 tbsp toasted sesame seeds

→ To Serve

17 - Steamed jasmine or brown rice (optional)
18 - Extra sesame seeds and sliced spring onions for garnish

# Steps:

01 - Toss tofu cubes with cornstarch until evenly coated. Heat 2 tbsp oil in a large nonstick skillet or wok over medium-high heat. Add tofu and cook, turning occasionally, until golden brown and crisp on all sides (about 8–10 minutes). Transfer to a plate.
02 - In a small bowl, whisk together miso paste, maple syrup, soy sauce, rice vinegar, water, sesame oil, and grated ginger until smooth.
03 - In the same skillet, heat 1 tbsp oil over medium-high heat. Add snap peas, bell pepper, and spring onions. Stir fry for 2–3 minutes until vibrant and just tender. Add garlic and sesame seeds; stir fry for 30 seconds more.
04 - Return the tofu to the skillet. Pour in the miso maple sauce and toss everything together, cooking for 1–2 minutes until the sauce thickens and coats the tofu and vegetables.
05 - Spoon over steamed rice (if using), and garnish with extra sesame seeds and sliced spring onions.
