Miso Ginger Salmon Sesame Snap Pea (Printable)

→ For the Miso Ginger Salmon

01 - 4 salmon fillets (6 oz each), skin-on or skinless
02 - 2 tbsp white miso paste
03 - 2 tbsp soy sauce, low-sodium preferred
04 - 1 tbsp fresh ginger, grated
05 - 1 tbsp maple syrup or honey
06 - 1 tbsp rice vinegar
07 - 1 tsp toasted sesame oil
08 - 1 clove garlic, minced
09 - 1/4 tsp black pepper

→ For the Sesame Snap Pea Slaw

10 - 2 cups snap peas, thinly sliced on the diagonal
11 - 1 cup shredded red cabbage
12 - 2 medium carrots, julienned or shredded
13 - 2 green onions, thinly sliced
14 - 2 tbsp toasted sesame seeds

→ For the Sesame Dressing

15 - 2 tbsp rice vinegar
16 - 1 tbsp soy sauce
17 - 1 tbsp toasted sesame oil
18 - 1 tbsp honey or maple syrup
19 - 1 tsp grated fresh ginger
20 - 1/2 tsp sriracha or chili paste
21 - Pinch of salt

# Steps:

01 - Preheat oven to 400°F. Line a baking sheet with parchment paper.
02 - Whisk together miso paste, soy sauce, grated ginger, maple syrup, rice vinegar, sesame oil, garlic, and black pepper in a small bowl.
03 - Place salmon fillets on the prepared baking sheet. Brush the miso ginger marinade generously over each fillet. Let marinate for 10 minutes while preparing the slaw.
04 - Combine snap peas, red cabbage, carrots, green onions, and sesame seeds in a large bowl.
05 - Whisk together rice vinegar, soy sauce, sesame oil, honey, grated ginger, sriracha, and salt in a separate bowl. Pour over the slaw and toss to coat evenly.
06 - Bake salmon for 12 to 15 minutes, until fish flakes easily with a fork and is just cooked through.
07 - Serve salmon fillets alongside a generous portion of sesame snap pea slaw. Garnish with additional sesame seeds and green onions if desired.
