Creamy avocados stuffed with Mediterranean tuna, cucumber, and feta for a satisfying 15-minute meal.

# List of ingredients:

→ Base

01 - 2 large ripe avocados

→ Tuna Salad

02 - 1 (5 oz) can tuna in olive oil, drained
03 - 1/2 cup cucumber, diced
04 - 1/4 cup cherry tomatoes, quartered
05 - 2 tbsp red onion, finely diced
06 - 2 tbsp Kalamata olives, pitted and chopped
07 - 2 tbsp crumbled feta cheese
08 - 1 tbsp fresh parsley, chopped
09 - 1 tbsp lemon juice
10 - 1 tbsp extra virgin olive oil
11 - 1/4 tsp dried oregano
12 - Salt and freshly ground black pepper, to taste

# Steps:

01 - Slice the avocados in half lengthwise and remove the pits. Scoop out about 1 tablespoon of flesh from each half to create a larger cavity; set the scooped avocado aside.
02 - In a medium bowl, mash the scooped avocado flesh with a fork until smooth.
03 - Add the tuna, cucumber, cherry tomatoes, red onion, olives, feta, parsley, lemon juice, olive oil, oregano, salt, and pepper. Mix until well combined.
04 - Spoon the tuna mixture evenly into each avocado half, gently pressing to fill the cavities completely.
05 - Serve immediately, garnished with extra parsley or a drizzle of olive oil if desired.
