Lentil and Kale Stew (Printable)

# Steps:

01 - Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery. Sauté for 5 to 7 minutes, stirring occasionally, until the vegetables have softened.
02 - Add minced garlic, ground cumin, smoked paprika, dried thyme, and crushed red pepper flakes to the pot. Stir and cook for 1 minute until fragrant.
03 - Incorporate rinsed lentils, diced tomatoes with juices, diced potato, and vegetable broth. Add bay leaf, salt, and black pepper. Mix thoroughly to combine all components.
04 - Increase heat and bring mixture to a boil. Reduce heat to low, cover, and let simmer for 25 minutes, stirring occasionally.
05 - Stir in chopped kale. Simmer uncovered for an additional 10 to 15 minutes, until lentils and vegetables are fully tender.
06 - Remove bay leaf. Stir in lemon juice. Adjust salt and black pepper to taste if needed.
07 - Ladle stew into bowls. Garnish with chopped fresh parsley and serve hot.
