01 - 1 large head cauliflower, cut into florets
02 - 2 tablespoons olive oil

05 - 1 can (15 oz) chickpeas, drained and rinsed
06 - 1 tablespoon olive oil
07 - 1 teaspoon smoked paprika
08 - ½ teaspoon ground cumin
09 - ½ teaspoon garlic powder
10 - ¼ teaspoon sea salt

11 - 1 cup cherry tomatoes, halved
12 - 1 cup cucumber, diced
13 - ½ small red onion, thinly sliced

→ Lemon Tahini Dressing

18 - ¼ cup fresh lemon juice

# Steps:

01 - Preheat the oven to 400°F.
02 - Pulse cauliflower florets in a food processor until they resemble small grains. Toss with olive oil, salt, and pepper. Spread on a lined baking sheet and roast for 15-18 minutes, tossing halfway, until lightly golden and tender.
03 - Dry chickpeas thoroughly, then toss with olive oil, paprika, cumin, garlic powder, and salt. Spread on a separate baking sheet and roast for 20-25 minutes, shaking halfway, until crispy and golden.
04 - In a small bowl, whisk together tahini, lemon juice, maple syrup, minced garlic, salt, and 3 tablespoons water. Add more water if needed for a pourable consistency.
05 - Halve the tomatoes, dice the cucumber, slice the red onion and avocado, and chop the parsley.
06 - Divide the warm cauliflower quinoa among four bowls. Top each with roasted chickpeas, fresh vegetables, avocado, parsley, and sesame seeds. Drizzle generously with lemon tahini dressing.
