# Steps:

02 - In the same skillet, add onion, bell peppers, mushrooms, and zucchini. Sauté for 5–6 minutes until vegetables are tender.
03 - Add minced garlic, dried thyme, sage, smoked paprika, nutmeg, salt, and pepper. Stir for 1 minute until fragrant.
04 - Return sausage to the skillet and toss with vegetables. Cook for 2–3 minutes to heat through.
05 - Add spinach and cook until just wilted, about 1 minute.
06 - Remove from heat. Sprinkle with fresh parsley and grated Parmesan if desired. Serve hot.
