# List of ingredients:

→ Protein

01 - 1 lb lean ground turkey
02 - 1 can (14 oz) cannellini beans, drained and rinsed
03 - 1 can (14 oz) chickpeas, drained and rinsed

→ Vegetables

04 - 1 large onion, diced
05 - 2 carrots, peeled and sliced
06 - 2 celery stalks, sliced
07 - 1 red bell pepper, diced
08 - 2 cups fresh spinach, roughly chopped
09 - 3 cloves garlic, minced

→ Liquids

10 - 6 cups low-sodium chicken or vegetable broth
11 - 1 can (14 oz) diced tomatoes with juice

→ Seasonings

12 - 2 tsp dried Italian herbs
13 - 1 tsp smoked paprika
14 - ½ tsp ground black pepper
15 - ½ tsp salt, or to taste
16 - ¼ tsp crushed red pepper flakes (optional)

→ Finishing

17 - 2 tbsp fresh parsley, chopped
18 - Juice of ½ lemon

# Steps:

01 - Heat a large soup pot over medium heat. Add lean ground turkey and cook, breaking up with a spoon, until browned and cooked through, about 5 to 7 minutes. Remove excess fat if necessary.
02 - Add diced onion, sliced carrots, sliced celery, and diced red bell pepper to the pot. Cook for 5 minutes until vegetables start to soften.
03 - Stir in minced garlic and cook for 1 minute until fragrant.
04 - Add cannellini beans, chickpeas, diced tomatoes with juice, and broth. Stir to combine evenly.
05 - Incorporate dried Italian herbs, smoked paprika, black pepper, salt, and optional crushed red pepper flakes. Mix well.
06 - Bring mixture to a boil, then reduce heat to low. Cover and simmer gently for 20 minutes.
07 - Stir in fresh spinach and simmer uncovered for 3 to 5 minutes until spinach wilts.
08 - Remove from heat and stir in chopped parsley and lemon juice. Adjust seasoning as needed.
09 - Ladle hot soup into bowls and serve immediately.
