01 - Preheat grill to medium-high heat, approximately 400°F.
02 - Brush chicken breasts with 2 tablespoons olive oil. Season generously with salt, black pepper, and smoked paprika on both sides.
03 - Brush halved nectarines with 1 tablespoon olive oil to coat evenly.
04 - Place seasoned chicken on the preheated grill. Cook for 6 to 8 minutes per side until internal temperature reaches 165°F and juices run clear. Remove from grill and let rest for 5 minutes.
05 - While chicken rests, place nectarine halves cut side down on the grill. Cook for 2 to 3 minutes until distinctive grill marks appear and fruit begins to soften.
06 - In a small mixing bowl, whisk together honey, lime zest and juice, chopped cilantro, chopped mint, minced garlic, Dijon mustard, salt, black pepper, and 1 tablespoon olive oil until emulsified.
07 - Slice rested grilled chicken across the grain. Arrange chicken and grilled nectarines on a serving platter. Drizzle honey lime herb dressing over the top. Garnish with additional fresh herbs if desired. Serve immediately while warm.
