Tender grilled chicken with juicy apricots and zesty basil-lime drizzle creates this vibrant summer dish ready in just 35 minutes.

# List of ingredients:

→ For the Chicken & Apricots

01 - 4 boneless, skinless chicken breasts
02 - 2 tablespoons olive oil
03 - 1 teaspoon salt
04 - ½ teaspoon black pepper
05 - 6 fresh apricots, halved and pitted

→ For the Basil Lime Drizzle

06 - ½ cup fresh basil leaves, packed
07 - 2 tablespoons fresh lime juice (about 1 lime)
08 - 1 teaspoon lime zest
09 - 2 tablespoons honey
10 - ¼ cup extra-virgin olive oil
11 - ¼ teaspoon salt
12 - ⅛ teaspoon ground black pepper

# Steps:

01 - Preheat the grill to medium-high heat (400°F).
02 - Pat the chicken breasts dry with paper towels. Rub both sides with 2 tablespoons olive oil, 1 teaspoon salt, and ½ teaspoon black pepper.
03 - Place the chicken and apricot halves (cut side down) on the grill. Grill chicken for 6–7 minutes per side or until internal temperature reaches 165°F. Grill apricots for 2–3 minutes per side until lightly charred and softened. Remove and set aside.
04 - While the chicken grills, prepare the basil lime drizzle: In a blender or food processor, combine basil, lime juice, lime zest, honey, olive oil, ¼ teaspoon salt, and ⅛ teaspoon pepper. Blend until smooth.
05 - Arrange grilled chicken and apricots on a platter. Drizzle generously with the basil lime sauce. Serve immediately.

# Expert Advice:

01 -
  • The sweet and smoky combo tastes like something you would order at a fancy restaurant but comes together in under 40 minutes
  • That basil lime drizzle is the kind of sauce you will want to put on everything afterwards
02 -
  • Dry the chicken thoroughly with paper towels or it will steam instead of getting those desirable grill marks
  • The sauce can separate if it sits too long so give it a quick whirl right before serving
03 -
  • If it is raining or you do not have a grill a cast iron skillet or grill pan works just fine
  • Peaches or nectarines make excellent substitutes when apricots are not in season
