16 - 2 garlic cloves, minced
17 - 1 teaspoon grated fresh ginger
18 - 2 to 3 tablespoons water, as needed

# Steps:

01 - Combine tofu cubes, soy sauce, and sesame oil in a bowl. Marinate for 5 minutes, then sprinkle cornstarch over the tofu and toss gently to coat each piece evenly.
02 - Heat a nonstick skillet over medium-high heat with a small amount of oil. Add tofu and sear until golden and crispy on all sides, approximately 8 minutes. Transfer tofu to a plate and set aside.
03 - Cook noodles in a saucepan according to package directions. Drain and rinse under cold water to prevent sticking, then set aside.
04 - In a mixing bowl, whisk together all sauce ingredients, adding water gradually until smooth and pourable.
05 - Return skillet to medium-high heat and add a splash of oil. Stir-fry carrot, bell pepper, and sugar snap peas for 2 to 3 minutes until just tender yet vibrant.
06 - Add drained noodles and crispy tofu to the skillet with vegetables. Pour gochujang sauce over contents and toss thoroughly to coat and heat through, about 2 minutes.
