23 - 2-3 tbsp water

# Steps:

01 - Mix olive oil, minced garlic, oregano, thyme, rosemary, salt, and black pepper in a small bowl. Rub the mixture over the steak. Let rest at room temperature for 15 minutes.
02 - Heat a grill pan or skillet over medium-high heat. Cook the steak 3-5 minutes per side for medium-rare, or to desired doneness. Transfer to a cutting board, tent loosely with foil, and let rest 5 minutes. Slice thinly against the grain.
03 - Combine avocado, lime juice, olive oil, garlic, cilantro or parsley, honey, salt, and black pepper in a blender or food processor. Blend until smooth. Add water, 1 tablespoon at a time, until desired consistency is reached.
