01 - 4 (6 oz) boneless ribeye or sirloin steaks
02 - 2 tablespoons olive oil
03 - 1 teaspoon kosher salt
04 - ½ teaspoon freshly ground black pepper

→ Garlic Butter

05 - 4 tablespoons unsalted butter, softened
06 - 3 cloves garlic, minced
07 - 1 tablespoon fresh parsley, finely chopped
08 - 1 teaspoon lemon zest

→ Roasted Radishes

09 - 2 cups radishes, trimmed and halved
10 - 1 tablespoon olive oil
11 - ¼ teaspoon salt
12 - ¼ teaspoon black pepper

→ Greens

13 - 4 cups mixed baby greens (spinach, arugula, or Swiss chard)
14 - 1 tablespoon olive oil
15 - 1 teaspoon fresh lemon juice
16 - Salt and pepper, to taste

# Steps:

01 - Preheat the oven to 425°F.
02 - Toss radishes with olive oil, salt, and pepper in a bowl. Spread on a baking sheet and roast for 18–20 minutes, turning halfway, until golden and tender.
03 - While radishes roast, pat steaks dry and rub with olive oil, salt, and pepper.
04 - Mix softened butter with minced garlic, parsley, and lemon zest in a small bowl. Set aside.
05 - Heat a large skillet over medium-high heat. Add steaks and sear for 3–4 minutes per side for medium-rare, or to desired doneness.
06 - In the final minute of cooking, add half the garlic butter to the pan, spooning it over the steaks. Remove steaks to rest, tented with foil.
07 - In the same skillet, heat olive oil over medium heat. Add greens and sauté for 1–2 minutes until just wilted. Stir in lemon juice, season with salt and pepper.
08 - Serve steaks topped with remaining garlic butter, alongside roasted radishes and greens.

# Expert Advice:

01 -
  • The roasted radishes transform into something sweet and unexpected, even if you think you do not like radishes
  • Everything cooks in under 40 minutes but tastes like it took all day
  • The garlic butter creates an instant sauce that makes every bite feel luxurious
02 -
  • Let the steaks rest for at least 5 minutes before cutting into them, or all those delicious juices will end up on your cutting board instead of in the meat
  • The garlic butter can burn quickly over high heat, so only add it during that final minute of cooking
  • Radishes shrink significantly when roasted, so do not be afraid to pile them on the baking sheet
03 -
  • Use a cast iron skillet if you have one, it holds heat better than stainless steel and gives you an excellent sear
  • The radishes are done when a fork slides through them easily and they have started to caramelize at the edges
