01 - Preheat oven to 400°F. Line a baking sheet with parchment paper.
02 - In a large bowl, toss zucchini, yellow squash, cauliflower, bell pepper, and red onion with olive oil, thyme, rosemary, garlic powder, salt, and pepper until well coated.
03 - Spread the vegetables in a single layer on the prepared baking sheet.
04 - Roast for 20 minutes, stirring halfway through.
05 - Sprinkle Parmesan and mozzarella evenly over the vegetables. Return to the oven for an additional 8-10 minutes, until cheese is melted and golden.
06 - Serve hot, garnished with extra herbs if desired.
