01 - In a medium mixing bowl, whisk together chia seeds, unsweetened coconut milk, maple syrup or honey, and vanilla extract. Allow mixture to sit for 5 minutes, whisk again, then cover and refrigerate for at least 2 hours or overnight, until a thick pudding consistency forms.
02 - Combine cocoa powder, protein powder, coconut yogurt, and coconut flakes in a separate bowl. Stir until completely smooth and well combined.
03 - Toss fresh mixed berries with lemon juice in a small bowl, if desired.
04 - Spoon a layer of chia pudding into serving glasses or jars, followed by a layer of chocolate protein cream and a layer of berries. Repeat layering as desired.
05 - Top each portion with additional berries, coconut flakes, and optional shaved dark chocolate.
06 - Serve chilled directly from the refrigerator.
