01 - Preheat your oven to 350°F (175°C).
02 - In a small bowl, mix chopped almonds, oats, melted coconut oil, maple syrup, cinnamon, and salt until well combined. Spread the mixture on a baking sheet lined with parchment paper.
03 - Bake for 8-10 minutes, stirring once halfway through, until golden and fragrant. Remove from oven and allow to cool completely.
04 - While the crumble cools, make the pudding: In a food processor or high-speed blender, combine avocados, cocoa powder, milk, protein powder, maple syrup, vanilla, and sea salt. Blend until smooth and creamy, scraping down the sides as needed.
05 - Taste and adjust sweetness or cocoa as desired.
06 - Spoon the pudding into serving cups or bowls.
07 - Top each serving with a generous sprinkle of almond crumble just before serving.
08 - Garnish with fresh berries, coconut flakes, or a drizzle of melted chocolate if desired.
