Cover and refrigerate for at least 2 hours or overnight until mixture achieves pudding-like consistency.
02 - In a separate bowl, whisk together chocolate protein powder, cocoa powder, yogurt, almond butter, and maple syrup until completely smooth and no lumps remain. Mixture should be thick and spreadable.
03 - Remove chia cream from refrigerator and stir gently to loosen texture before layering.
04 - Layer components in serving glasses or bowls in this order: chia cream, chocolate protein mixture, mixed berries. Repeat layers if desired, finishing with berries on top.
05 - Sprinkle toasted sliced almonds over the top, add additional fresh berries, and finish with shaved dark chocolate if using.
06 - Serve immediately or refrigerate until ready to enjoy. Parfaits can be made up to 24 hours in advance.
