# Expert Advice:

01 -
  • The sweet heat from caramelized pineapple against smoky shrimp is the kind of flavor combination that makes you close your eyes.
  • That slaw is creamy, crunchy, and bright enough to stand on its own, but piled under spiced shrimp it becomes something you will crave on random Tuesdays.
02 -
  • Do not walk away from the shrimp while they cook, thirty seconds too long and they turn rubbery and sad.
  • Patting the shrimp completely dry before marinating was the single change that took this from good to restaurant quality.
03 -
  • Toss the pineapple cubes in a tiny pinch of salt before cooking, it sounds wrong but it amplifies the sweetness and helps caramelization.
  • Let the skillet get fully hot before the shrimp go in, that initial sizzle is what gives you the charred edges that make this dish memorable.
